Cotton features American comfort food and over 40 wines by the glass, and has held the distinct honor of “Best Martinis in New Hampshire”. Chef/Author/Owner Jeffrey Paige in 1988 became Executive Chef at Canterbury Shaker Village, one of two remaining active Shaker communities left in the world at the time. Developing an appreciation for New England’s culinary heritage, he developed numerous relationships with farmers, cheesemakers, gristmills, smokehouses, fishermen from all over the New England and in 1991 founded the state’s first Farm to Restaurant Connection.
